Camp Oven Damper

Serves: approx. 4 people

Ingredients:

  • 2 1/2 cups of self-raising flour

  • 2 Tbspn olive oil

  • 2 eggs

  • 1 jar olives, chopped

  • 3 sprigs of fresh rosemary, leaves removed

  • 1/4 cup of milk

  • Salt & pepper to season

Method:

  • Add all ingredients in a bowl

  • Mix to combine

  • Remove coals from fire to the side for the damper to cook on

  • Place trivet inside camp oven

  • Scrunch up some baking paper and line the top of your camp oven

  • Place mixture on top of baking paper

  • Cover camp oven and cook for approx. 30 minutes or until golden brown

  • Remove damper from camp oven to a chopping board

  • Slice damper and enjoy!

Tips & Hints:

  • Spread damper with soften butter and any topping you desire (golden syrup, hot honey - see recipe, jam etc.)

  • Why not turn it into lunch and make it a gourmet sandwich or dip it into soup on those chilly days
